Lunch Success!

I have succeeded at my plan this week to pack my lunches!  I made enough of this pasta salad to last for 5 meals.  It has penne, artichokes, tomatoes, asparagus and feta.  Mixed with some red wine vinegar and oil, it tastes great even cold!

I pulled this container out in the library and made a bunch of chip-eating undergrads verrrrry jealous.  

Now I need to figure out what’s for lunch next week… Suggestions?

Succumbing to a Busier Life.. and Dealing with it at Whole Foods…
Look! I’m here! Blogging again!  Let’s see how long I can keep this going.  The exciting news is I FINALLY got an iPhone over the weekend, so I’m feeling that this could greatly impact my blogging, in a positive way.
Since January, I’ve been enrolled in Columbia’s Post Bac PreMed program.. basically a redo of undergrad for those of us who’ve already received a Bachelors, in order to complete the necessary prep courses for Med School.   I majored in Film at NYU… didn’t take a single test… and now I’ve been slogging through Calculus, Physics and Chemistry.  It’s taken me much longer than expected to realize how much work and studying time I would be putting in - way more than I could have ever imagined.  Math doesn’t come easy to me, it takes work. But when I work hard enough, I can definitely do it.
Not surprisingly, the schedule change has impacted my eating and lifestyle.. probably the most difficult changes to deal with.  My priorities have changed and convenience foods are becoming a reality more and more often.  I just got back from Whole Foods and I thought I might highlight some of the changes I’ve made to my purchasing habits:
New Staples:
Mac and Cheese in a box - mix some peas in and this is dinner for two nights
Amy’s Chili (canned) - this was a favorite COLLEGE staple which has returned! I buy the low sodium type to feel less guilty.
Luna Bars - the toasted nuts and cranberries type is low in sugar and is the best damn grab and go snack I can find.
Ramen - don’t freak out… Whole Foods has a SODIUM FREE, MSG FREE, all disgusting ingredients-free brand of ramen.. with buckwheat noodles.  It’s about $1.50 a pouch and I like to mix in some frozen broccoli.  Life changing.
Dr. Praeger’s “Chicken” Nuggets - Cook up some leafy greens and sweet potato while these fake chicken nuggets cook in the oven.  
Most nights I don’t get home until after 8:30 and that means I literally cannot spare an ounce of brain cells thinking about dinner.  I feel like I’ve found some good ways around this problem, but I definitely long for the days of having time to cook more elaborate meals and baked goods… and I’m not sure when that day will come again!
Those of you who’ve been in my shoes… what do you do to eat healthy on a seriously tight schedule?

Dinner in NY


I love this photo series by Miho Aikawa.  At first it made me a little sad, seeing so many people dining alone or in front of a television/computer/electronic device.  Growing up, I ate dinner with my family almost every night.  I’ve always thought that dining in a social setting helps to convey important lessons about nutrition and social etiquette.

Then I looked down and realized I was eating breakfast while viewing these photos on my computer.  Nowadays, I probably eat most of my meals alone, in front of my computer, or surrounded by books and papers.  I’m a student, so my schedule is odd and mostly solitary.  I suppose it’s nice to see I’m not alone.

Now that I’m living with a roommate, having someone to share a meal with might be the best part of the change — and Lauren and I have definitely shared those feelings with each other.  There is nothing like coming home at the end of the day and being able to chat with someone over a delicious plate of something…. or even a box of macaroni and cheese with some peas mixed in. Although, I still think that meal is pretty delicious.

Montreal-style bagel adventure!

I was excited (probably too excited) to learn that Montreal has a long history of making great bagels.  I LOVE bagels. Growing up in New Jersey and living in NYC for the past 9 years has turned me into quite the bagel snob.  

Before setting out to try the bagels at Fairmount, the original bagel bakery in Montreal, a friend warned us that this version would be quite different than what we were used to.  She told us to appreciate them for what they are and NOT to compare. So true, thanks Lori!

The verdict? AMAZING bagels!  They are much denser, a bit sweeter, and a tad more sour than NY bagels. They are also about half the size, which was nice since it didn’t leave us in carb-coma. They were served warm, with cream cheese and covered in sesame seeds.  I loved these bagels so much, I’d argue that they’re comparable to the bagels I grew up loving.

In case you were wondering what an insane person packs for an 11 hour train ride, here is a photo of most of my rations.  The only thing more terrifying than being stuck in one place and starving is being stuck on a train with TRAIN FOOD and starving.

We have:

- 7 Luna bars
- 2 bananas
- 2 peaches
- box of dried apricots
- bag of pistachios 
- 2 yogurts 
- 4 peanut butter and jelly sammies
- box of crackers
- laughing cow cheese wedge box

Not pictured: 
- 2 bagels 
- all the coffee 

Also, George continues to sleep.

Fried Eggs, Wild Rice & Kale
Remember me?  One time frequent blogger who’s been sucked into the Columbia postbac pre-med program, swallowed by terrifying Physics tests and crippling amounts of work?  
I’m alive!  I’m eating all the things!  Today I added some kale to leftover wild rice and poured a glug of soy sauce and a squirt of sricacha in the pan.  Once the kale was wilted, I set the rice and greens aside and fried up two eggs.  A hearty lunch is necessary to make it through my classes today, which end at 10:30pm.
