Simple Dal with Roasted Vegetables

I am the master of totally unauthentic Indian food. I’ve adapted the recipe to work with my tight schedule and lack of ethnic ingredients. But guess what? It still tastes good, it’s healthy and super simple to make.
For the dal:
- 1 cup of red lentils
- 1 clove minced garlic
- 1 tsp minced ginger
- 1 tsp garam masala
- cayenne pepper to your liking
Add 1.5 to 2 cups of water and simmer for about 30 minutes, until the lentils begin to fall apart.
For the veggies:
- I tossed cauliflower and brussel sprouts in some tamari and oil and baked them in the oven at 425 for 30 minutes.
I like to add some equally unauthentic sriracha before digging in.
What I Made: Garam Masala Lentils with Crispy Cauliflower
Lentils and rice is one of my favorite things to make because it costs next to nothing and it’s healthy, filling, and delicious. I usually make lentils with curry or with balsamic vinegar (don’t knock it till you’ve tried it!) but last night I was craving something a little sweeter.
While simmering the lentils I added a few teaspoons of garam masala. For those of you unfamiliar, this is an Indian spice blend with a strong cinnamon taste. The blend can also include spices like cumin, coriander, and cardamom. I wanted to add some coconut milk but I was all out, so instead I added a 1/2 cup of almond milk. The result was creamy and delicious lentils.
Meanwhile, I mixed some cauliflower with olive oil and roasted it until crispy in the oven. When the lentils were finished I served them over basmati rice and sprinkled some cauliflower on top.
Every time I make lentils I end up with enough to last for days… which is great because it means I get to take a break from cooking the next night.
Simple, healthy dinner after a not so simple, not so healthy weekend.
Lentils, brown/black rice mixture, and steamed broccoli. I like to add a few drizzles of balsamic vinegar to lentils. I don’t know why, but it tastes extra delicious.
What I Made: Lentils with Basmati Rice
Last night’s dinner, post bug disaster. I like to cook lentils with paprika, chili powder, thyme and a little balsamic vinegar. I’m not a huge fan of white rice, but I can eat basmati by the pound.
Very easy dinner - took about 35 minutes total. And I have enough leftovers for 2 days!
