Curried Kale, Okra, and Red Lentils
Living near a Whole Foods is the best/worst thing to ever happen to me.  While I understand why it’s often referred to as “whole paycheck,” I DO think it’s possible to shop there on a budget.  You just need to have serious restraint… something I definitely lacked today.
Along with many other unnecessary purchases, (cheese), to pick up some red curry paste, kale, and okra for tonight’s dinner.  I cooked the red lentils with coconut milk, diced tomatoes, grated ginger, curry paste, and a diced jalepeno.  On the side I cooked the kale and okra together and mixed it into the cooked lentils before serving it all over brown rice.
Also, I’d like to point out that cooking on a FULL SIZE stove is a revelation…something that I sorely missed in my last apartment.

SPICY TEMEH AND MASHED GARBANZO TACOS
When life is hard, eat tacos.
Normally when I’m feeling stressed, sad or sick I stay as far from the kitchen as possible.  Sometimes you just need to let someone else (like the Italian restaurant downstairs) do the cooking for you.
Today I was feeling stressed, sad AND sick… and apparently the combination of all three means I need to make something work.. like dinner.  Tacos are one of my favorite things to make because you can fill them with almost anything in your fridge.  Tonight’s tacos were just that, plus some accidental radicchio…
You’ll need:
Flour tortillas
1 package tempeh (I use 3 grain)
1/2 cup corn
1 small green pepper, sliced into thin strips
2 cups garbanzo beans
1 small jalepeno, minced
2 Tbsp tamari
2 Tbsp sesame oil
1 tsp cumin
shredded cheddar
red cabbage (or radicchio!) optional
1 lime
Method:
Crumble tempeh into bowl.  Mix with tamari, cumin and 1 tbsp sesame oil.  Heat remaining sesame oil in pan and add green pepper slices.  Cook for 5 minutes, then add tempeh mixture.  Stir frequently. After 10 minutes, add corn.
Add beans and jalepeno to a pot and cover.  Heat on low, stirring occasionally.
Once the beans are cooked, mash them up with a pastry knife or fork.
Put everything into a tortilla and nom it up.
Thanks to sick/sad/stressed food shopping, I bought radicchio instead of red cabbage. If you’ve had radicchio before, you know it’s pretty bitter.  I put it on the tacos anyway and it was suprisingly tasty!  I also forgot to buy a lime.  DON’T FORGET THE SQUEEZE OF LIME!

Vote for the Let’s Move! Campaign’s Recipes for Healthy Kids Contest!

Let’s Move!, in association with the U.S. Department of Agriculture (USDA), is challenging school nutrition professionals, chefs, students, parents and interested community members to create tasty, healthy, exciting new recipes for inclusion on school lunch menus across the country.

Let’s Move! is a government funded health campaign that I believe is doing a lot of good.  This is a great competition that got students and educators, and their parents, excited about creating recipes and cooking healthy foods.  I actually think I’m going to try the recipe posted above!  Check out the site and vote for your favorite.
