SPICY TEMEH AND MASHED GARBANZO TACOS
When life is hard, eat tacos.
Normally when I’m feeling stressed, sad or sick I stay as far from the kitchen as possible. Sometimes you just need to let someone else (like the Italian restaurant downstairs) do the cooking for you.
Today I was feeling stressed, sad AND sick… and apparently the combination of all three means I need to make something work.. like dinner. Tacos are one of my favorite things to make because you can fill them with almost anything in your fridge. Tonight’s tacos were just that, plus some accidental radicchio…
You’ll need:
- Flour tortillas
- 1 package tempeh (I use 3 grain)
- 1/2 cup corn
- 1 small green pepper, sliced into thin strips
- 2 cups garbanzo beans
- 1 small jalepeno, minced
- 2 Tbsp tamari
- 2 Tbsp sesame oil
- 1 tsp cumin
- shredded cheddar
- red cabbage (or radicchio!) optional
- 1 lime
Method:
- Crumble tempeh into bowl. Mix with tamari, cumin and 1 tbsp sesame oil. Heat remaining sesame oil in pan and add green pepper slices. Cook for 5 minutes, then add tempeh mixture. Stir frequently. After 10 minutes, add corn.
- Add beans and jalepeno to a pot and cover. Heat on low, stirring occasionally.
- Once the beans are cooked, mash them up with a pastry knife or fork.
- Put everything into a tortilla and nom it up.
Thanks to sick/sad/stressed food shopping, I bought radicchio instead of red cabbage. If you’ve had radicchio before, you know it’s pretty bitter. I put it on the tacos anyway and it was suprisingly tasty! I also forgot to buy a lime. DON’T FORGET THE SQUEEZE OF LIME!

This is a great competition that got students and educators, and their parents, excited about creating recipes and cooking healthy foods. I actually think I’m going to try the recipe posted above!
